Recipe of the week:
Take orzo and cook to box directions, chop up green, red and yellow peppers, cucumbers, some black olives, red onion and cilantro. Mix everything together in a bowl add in some reduced-fat Italian dressing and some goat cheese! YUM!!
Fruit of the week:
Mangos! Here in the Cayman Islands we are so fortunate to have indigenous fruit trees, one being MANGO TREES! They are so good for you! They are 106 calories per mango.They are high in dietary fiber, vitamin A, vitamin B6 and vitamin C. They are low in saturated fat, has no cholesterol and very low in sodium!
Veggie of the week:
Yellow peppers! I love yellow peppers! A cup of yellow peppers is only 50 calories per cup! They are high in dietary fiber, manganese, magnesium, niacin, potassium, vitamin A, vitamin B6, and vitamin C! They are low in saturated fat, has no cholesterol, very low in sodium and no sugar!
*Extra tip when eating canned tuna! To reduce the amount of sodium in canned tuna run water over the can a couple of times and squeeze the excess water off!
